Mainly known by the commercial name of “oliva di Gaeta DOP“, it is characterized by a peculiar very light green color, almost emerald, or purplish (depending on the ripeness) and brings with it an intense and unmistakable taste. Once loved by the Duke of Este, now in great demand in the kitchen and as a table olive, the Itran olive thrives on the hills of Cori. Pickled or dried, it's an explosion of flavor that fills the palate. Today, Cori is one of the main production centers of pickled Itrana olives and there is no Cori family that does not have a jar of these tasty black pearls in the pantry.
