Raverosse refers to a vineyard area in the municipality of Cori characterized by red limestone spurs that connect the heights of the Lepini Mountains to the volcanic hills of the Corese countryside. The amount of heat that nourishes this rock during the day is slowly returned to the vineyards at night, allowing the obtaining of the highest quality grapes. The wine has a ruby ​​red color, harmonious with hints of ripe red fruit.

• TECHNICAL SHEET: Red wine, classified Cori Rosso Doc, from Nero Buono di Cori grapes (50%) Montepulciano (30%) Cesanese (20%) Alcohol degree 13%

• VINEYARDS: In the locality of Raverosse, at an altitude of about 150-200 meters above sea level; calcareous-clayey soil; row training system with about 4,000 plants per hectare; yield per hectare equal to 80-100 quintals. The harvesting period is concentrated between 25 September and 10 October, the first grapes to be harvested are those of the good black, followed by the Cesanese and lastly those of Montepulciano.

• VINIFICATION: Healthy and perfectly ripe grapes, soft pressing and destemming; fermentation in contact with the skins for about 10 days at 24 ° C; malolactic yes; maturation in new barriques for Montepulciano for 8 months and barriques and second and third passage casks for the good black and Cesanese; bottle aging for 12 months.

• TASTING NOTES: Ruby red wine with violet reflections, vinous, intense aroma. Dry, medium-bodied, harmonious flavor with an elegant finish. Excellent for the whole meal, it enhances the characteristics with soups and meat dishes. Serve at 16-18 ° C. Store in a cool, dry place away from light. Optimal consumption 2-4 years after harvest.
