ORGANOLEPTIC : The intense green color oil that has an olfactory spectrum of suggestive amplitude that gives aromas ranging from aromatic herbs to almonds, from tomato to artichoke. The taste is initially sweet with well balanced bitter and spicy notes. It is an oil with an intense, persistent but not aggressive taste, characteristics that make it extremely versatile. Its strong hint of tomato makes it perfect for matching combinations such as: tomato pasta, buffalo caprese, bruschetta with garlic and tomato. Due to its light bitter and spicy notes it is the perfect accompaniment to meat carpaccio but also to dress salads and grilled vegetables.
OLIVE GROVES : Located on the lava hills of the Corese area at an altitude of about 200-400 meters above sea level; partly volcanic and partly calcareous-clayey soil; pot breeding with about 270 plants per hectare; hand picked in the first week of November; yield per hectare equal to 30-40 quintals.
MILLING : The olives at the beginning of the green veraison are pressed on the same day as the harvest in selected mills in the area, with a continuous cycle system, cold pressed, to maintain the richness of aromas that characterizes this oil.
All the unfiltered oil is stored under nitrogen, in stainless steel silos.
