Wine of refined elegance that encloses the land of origin, takes its name from the mythical Dioscuri to whom the ancient temple of Castore and Pollùce is dedicated, whose imposing remains enrich the archaeological heritage of Cori. Obtained from the vinification in purity of the Nero Buono di Cori, an ancient vine of millenary tradition, recovered and relaunched through research and experimentation that have documented its peculiar qualitative characteristics. It is a wine with a strong personality and intense color.

• TECHNICAL SHEET: Red wine, classified IGT Lazio, from 100% Nero Buono di Cori grapes. Alcohol degree 13%

• VINEYARDS: Located on the lava hills of the Cori area at an altitude of about 200-250 meters above sea level; clayey volcano soil; row training system with about 4,000 plants per hectare, guyot pruning; yield per hectare equal to 80-100 quintals. Harvest period 25th September - 5th October.

• VINIFICATION: Soft crushing and destemming; fermentation with the skins for about 7-8 days at a temperature of 26 ° -28 ° C; malolactic yes; maturation in steel for 12 months; aging in glass for 6 months.

• TASTING NOTES: Ruby red color with violet reflections, intense and fragrant aroma with hints of red fruits with a delicate, harmonious flavor with elegant complexity. Excellent for the whole meal, it enhances the characteristics with dishes with a strong and decisive taste. Serve at 16-18 ° C. Optimal consumption 2-3 years after harvest.
