Obtained from the vinification in purity of the ancient native Bellone vine, which has always been cultivated on the lava hills of Cori. Produced with the traditional classic method and aging in contact with the yeasts for at least 36 months.
• GENERAL INFORMATION: Grapes: Bellone 100% - Alcohol degree: 12.5%
• VINEYARDS: Selection of the bunches that come from the lava hills of the Corese area at an altitude of about 200-250 meters above sea level. Row training system with about 3000-4000 plants per hectare with a yield of 80-100 quintals per hectare. Harvesting period last week of August. Grapes harvested delicately by hand and placed in small boxes.
• VINIFICATION The grapes are selected and harvested by hand in crates of 20 kg and placed whole in the press. A “cremant” pressing cycle follows from which only the free-run must is extracted, with a yield of 50%. Fermentation takes place in stainless steel tanks at a controlled temperature of 15 ° C. In spring we proceed to the draft and the start of the second fermentation in the bottle according to the classic method and rest on the lees for at least 36 months.
• TASTING NOTES: Intense straw yellow color, fine and persistent perlage, intense and fragrant aroma, with delicate fruity, mentholated sensations to which are added the aromas deriving from the lysis of the yeast that recall small pastries. Savory, fresh and elegant taste, with a well-balanced sweetness. Perfect as an aperitif, pleasant throughout the meal, excellent with fish dishes. Serve at 7 ° C. Store in a cool, dry place away from light. Taste preferably within four years of disgorgement.
